SWEET CORN SOUP


 SWEET CORN SOUP

Ingredients

Water                                4 cups
Sweet Corn crushed       1 cup
Green Chillies chopped  1
Carrot small diced           1
Salt                                      to taste
Sweet Corn Kernels         1/2 cup
French Beans chopped   5-6
Corn-Starch                       2-3 tbsp
Black pepper Powder     1/4 tsp
Vinegar                              1/2 tsp

METHOD

  1. Crushed the sweet corn Kernels in a mixer grinder with some water  to make a fine paste. 
  2. In a big pot add water, crushed sweet corn kernels, green chillies and bring it to a boil.
  3.  Now turn the heat to medium and let it simmer for 4-5 minutes and keep on skimming on the top.
  4.  Then add carrot, salt, sweet corn kernels and keep on simmering for 4-5 minutes or until it starts to thicken.
  5. After 5 minutes add french beans and continue simmering.
  6.  Then in sweet corn soup add vinegar, mixture of corn-starch slurry and black pepper powder and cook until thickened.
  7. Now switch off the flames and serve the soup hot in a serving bowl and garnish with spring onion.
