CHAAT BASKET
Ingredients
For Katori
maida 1 cup
salt 1 tsp
ajwain 1 tsp
oil for frying
water as required
For chaat
Boiled potato 2
boiled chickpeas 1/2 cup
salt 1/4 tsp
chili powder 1/4 tsp
amchur 1/4 tsp
bhuna jeera 1/2 tsp
chat masala 1 tbsp
lemon juice 1 tbsp
onion chopped 1
green chilis 2-3
tamarind chutney 4-5 tbsp
green chutney 1-2 tbsp
beated curd 1 1/2 cup
chopped coriander 2 tbsp
sev bhujia 1/2 cup
Method
- First, take a mixing bowl and add maida, salt, ajwain and mix well. Now add water slowly and knead a soft dough. Keep aside for 1-2 hours.
- Boil the potatoes and peel them and chop them into small pieces and keep them separately in a bowl.
- Add boiled chickpeas,chopped onions, green chilis, salt ,amchur powder ,bhuna jeera,red chilli,chat masala and lemon juice .
- Mix well to make a chat. Keep aside.
- Dust some flour on the rolling area and roll small portion of dough into round shape like a chapati.
- Then take a bowl ,grease the bowl with some oil and stick the chapati to the bowl without any gaps and remove the excess dough.
- Make sure that it properly stuck to the bowl. Now heat some oil in the pan for deep frying.
- When the oil is hot enough drop the bowl in the oil, the dough side should come down. Fry this in the low flame, so that it can cook properly.
- Be patient while frying the Katori because it takes time. When it is fried properly the Katori leaves the bowl by itself.
- Now take the Katori from the oil, into a paper tissue. So that it can absorb the excess oil. And take it rest for some time.
- Now take the Katori then fill boiled potato and chickpeas chat into the katori.
- Then add green chutney and tamarind chutney. After that add the yogurt.
- Then add the chopped coriander leaves and add sev bhujia on the top. Adjust this stuffing according to your taste.
- Serve immediately.
- You may also add bhalla in the katori.
