KHASTA KACHORI

Ingredients

For dough
maida           1 cup
suji                 1 tsp
ghee              1/4 cup
salt                  1/2 tsp

For filling
 urad dal             1/4 cup
ghee                    2 tbsp
hing                      1/4 tsp
dhania powder    1/4 tsp
kassori methi       1/2 tsp
red chilli powder  1/4 tsp
amchur                 1/4 tsp
saunf                     1/4 tsp
garam masala       1/4 tsp
basen                     1 tsp
jeer                        1/4 tsp
salt                        1 tsp

Method

  1. Soak urad dal for 2 hours and grind coarse in a mixer grinder.
  2. In a bowl, knead a soft dough of maida,suji, melted ghee,salt and water as required. Cover the dough with moist cloth .Keep aside for 2 hours.
  3. For filling,heat ghee in a pan,add basen and sauté for 1-2 minute . Keep the flame to its lowest.
  4. Add coarse grinded urad dal paste. Then add all the masalas,cook till dal become brown.
  5. Take lemon size ball of maida,flatten it with your fingers and stuff it with 1 tsp filling and roll it like peda.
  6. Now gently roll the kachori with balen to get a medium thickness kachori.
  7. Heat oil for frying and keep the flame to a low. Now fry kachoris on low flame.
  8. Fry the kachoris till they become golden and crisp.
  9. Remove it on a paper napkin so that excess oil is absorbed.
  10. Immediately serve these kachoris with imly chutney and green chutney.
