MASALA DOSA

Ingredients

urad dhuli dal   1/2 cup
rice                     1 cup
meethi dana.      1 tsp
mix dhuli dal.       1 tsp each
(chana,moong,arhar etc.)
salt.                       as taste

For potato masala
potato boiled.       2
onion.sliced.         1
mustard seed       1/2 tsp
chana dal.             1 tsp
urad dhuli dal.      1 tsp
hing                       a pinch
curry leaves         8-10
chilli powder        1/4 tsp
salt.                       as taste
turmeric powder 1/4 tsp
oil                           1 tbsp


Method

  1. Soak the rice in a bowl with enough water for 4-5 hours or overnight.
  2. Soak urad dhuli,meethi dana and mix dals with enough water for 4-5 hours or overnight.
  3. Drain the water of rice and dals and blend in to make a fine paste in a mixer grinder, with little water,separately.
  4. Transfer both the mixtures into a deep bowl , add salt,mix well and keep aside.
  5. Cover and ferment in a warm place for 8-10 hours.
  6. For making potato masala ,heat oil in a pan ,Saute mustard seeds,hing,curry leaves,channa dal ,urad dal until the dal turn golden.
  7. Add onions and saute for few minutes.
  8. Crumble the potatoes and add them to the pan.Add salt ,turmeric and chilli powder with 2 tbsp of water.
  9. Saute for 2-3 minutes.keep aside.
  10. Heat a non- stick tawa ,sprinkle a little water on the tawa and wipe it off gently using a cloth.
  11. Pour a ladleful of the better on it and spread it in a circular motion to make a thin circle of (9")diameter.
  12. Pour a little ghee over it and along the edges and cook on a high flame till the dosa turns brown in colour and crisp.
  13. Spread some potato masala on it.
  14. Fold over to make a semi- circle or a roll.
  15. Serve the dosa immediately with coconut chutney and sambhar.
