MASALEDAR BHARWAN ALOO BAINGAN
Ingredients
small potatoes 250 gms
small baingan. 250 gms
onion. 2
tomato. 2
ginger. 1" piece
green chilli. 2
jeera. 1/2 tsp
rai. 1/2 tsp
ajwain. 1/2 tsp
methi dana. 1/4 tsp
haldi. 1/2 tsp
red chilli powder. 1/2 tsp
salt. 3/4 tsp
oil. 4 tbsp
Masala for filling
dhania saboot. 3 tbsp
till white 1 tbsp
jeera 1 tsp
hing. 2 pinch
dry red chilli 2
amchur 1 tsp
salt 3/4 tsp
oil 1 tsp
Method
- Boil the potatoes with some salt and give cut sign of +.
- Give cut sign of + in baingan and rub some salt and keep aside.
- Heat tawa ,pour 1 tsp oil ,fry all the masala for filling till light brown except salt and amchur.
- Grind this masala with salt and amchur in mixer grinder.
- Heat oil in a kadahi,add rai,ajwain,jeera,methi dana ,fry till light brown.
- Add chopped onions and fry till light brown.Add chopped ginger and chilli.
- Add haldi,red chilli powder,salt and chopped tomatoes,cooked till tomatoes are soft.
- Fill the grinded masala in +cut baingan and +cut potatoes.
- Add filled baingan and potatoes in onion tomato masala.
- Add 1-2 tbsp water and cover with lid.Cook on slow flame.
- Cook till baingan are soft .
- Garnish with coriander.
