MASALEDAR BHARWAN ALOO BAINGAN

Ingredients

small potatoes              250 gms
small baingan.              250 gms
onion.                           2
tomato.                         2
ginger.                          1" piece
green chilli.                  2
jeera.                             1/2 tsp
rai.                                 1/2 tsp
ajwain.                           1/2 tsp
methi dana.                    1/4 tsp
haldi.                              1/2 tsp
red chilli powder.           1/2 tsp
salt.                                 3/4 tsp
oil.                                  4 tbsp

Masala for filling

dhania saboot.   3 tbsp
till white            1 tbsp
jeera                   1 tsp
hing.                   2 pinch
dry red chilli       2
amchur               1 tsp
salt                      3/4 tsp
oil                       1 tsp

Method

  1. Boil the potatoes with some salt and give cut sign of +.
  2. Give cut sign of + in baingan and rub some salt and keep aside.
  3. Heat tawa ,pour 1 tsp oil ,fry all the masala for filling till light brown except salt and amchur.
  4. Grind this masala with salt and amchur in mixer grinder.
  5. Heat oil in a kadahi,add rai,ajwain,jeera,methi dana ,fry till light brown.
  6. Add chopped onions and fry till light brown.Add chopped ginger and chilli.
  7. Add haldi,red chilli powder,salt and chopped tomatoes,cooked till tomatoes are soft.
  8. Fill the grinded masala in +cut baingan and +cut potatoes.
  9. Add filled baingan and potatoes in onion tomato masala.
  10. Add 1-2 tbsp water and cover with lid.Cook on slow flame.
  11. Cook till baingan are soft .
  12. Garnish with coriander.
