STUFFED AMRITSARI KULCHA
Ingredients
maida 3 cup
curd. 3 tbsp
baking soda 1/3 tsp
baking powder 1/2 tsp
sugar 1 tsp
oil 1 tsp
salt. 3/4 tsp
ajwain( optional) 1/2 tsp
butter. 3 tbsp
For filling
potato. 2-3
onion ( finally chopped ) 1
salt 1/2 tsp
green chilli (chopped ). 1-2
ginger (grated) 1/2 tsp
amchoor powder. 1/2 tsp
coriander powder 1 tsp
red chilli powder. 1-2 pinch
garam masala 1/4 tsp
coriander leaves (chopped). 1 tbsp

Method
- Sieve the maida in a bowl and mix curd,salt,sugar,baking powder,baking soda,oil in it.
- Mix all the ingredients well with hands.Knead the dough well with hands with lukewarm water to make it smooth.
- Flip and punch the dough for 5 minutes to make it smooth.
- Apply some oil to the dough and cover it with kitchen towel and keep it at a warm place for 3-4 hours.
- Within 3-4 hours the dough will rise.Punch the dough once again to fix it .
- Make a chapati of the whole dough and apply 1tbsp butter on it,then fold the chapati into half.
- Apply 1 tbsp butter on folded chapati and fold it once again,then apply the final layer of butter on the folded chapati and fold it to make a roll.
- Cut the pieces of the roll to make kulchas.
- For the filling ,mashed the boiled potatoes,put all the other ingredients of the filling and mix well.
- Take one ball of the dough and roll it into a flat disc of 3 inch.Put the potato mixture in it and fold it.Now roll the kulcha with balen or with hands.
- Bake this in tandoor,oven or on tawa.
- Serve this kulcha with chole and onion temerind mixture.
