STUFFED AMRITSARI KULCHA

Ingredients

maida                      3 cup
curd.                        3 tbsp
baking soda             1/3 tsp
baking powder        1/2 tsp
sugar                       1 tsp
oil                           1 tsp
salt.                        3/4 tsp
ajwain( optional)   1/2 tsp
butter.                     3 tbsp

For filling
potato.                                     2-3
onion ( finally chopped )        1
salt                                          1/2 tsp
green chilli (chopped ).          1-2
ginger (grated)                       1/2 tsp
amchoor powder.                   1/2 tsp
coriander powder                  1 tsp
red chilli powder.                  1-2 pinch
garam masala                        1/4 tsp
coriander leaves (chopped).  1 tbsp

Method

  1. Sieve the maida in a bowl and mix curd,salt,sugar,baking powder,baking soda,oil in it.
  2. Mix all the ingredients well with hands.Knead the dough well with hands with lukewarm water to make it smooth.
  3. Flip and punch the dough for 5 minutes to make it smooth.
  4. Apply some oil to the dough and cover it with kitchen towel and keep it at a warm place for 3-4 hours.
  5. Within 3-4 hours the dough will rise.Punch the dough once again to fix it .
  6. Make a chapati of the whole dough and apply 1tbsp butter on it,then fold the chapati into half.
  7. Apply 1 tbsp butter on folded chapati and fold it once again,then apply the final layer of butter on the folded chapati and fold it to make a roll.
  8. Cut the pieces of the roll to make kulchas.
  9. For the filling ,mashed the boiled potatoes,put all the other ingredients of the filling and mix well.
  10. Take one ball of the dough and roll it into a flat disc of 3 inch.Put the potato mixture in it and fold it.Now roll the kulcha with balen or with hands.
  11. Bake this in tandoor,oven or on tawa.
  12. Serve this kulcha with chole and onion temerind mixture.
